  • Asian Cashew Sesame Salad & Japanese Ginger Dressing

    I was craving ginger today.  Maybe because I love the slightly hot zesty flavor, but actually....I also love the fact that it is loaded with anti-inflammatory qualities (which btw, helps keep our bodies young :)

    .

    So this is what I came up with...a delicious Cashew Sesame Salad with an incredibly yummy dressing, Japanese Ginger, which was super easy to blend together.

    CASHEW SESAME SALAD

     

    Bed of dark leafy greens (+ I added 2 shredded swiss chard leaves)

     

    1 radish - sliced

     

    1 carrot - shredded

     

    1/2 cup raw cashews

     

    1/4 cup sesame seeds

     

    Cover with Japanese Ginger Dressing 

     

     

     

     

     

    JAPANESE GINGER DRESSING

     

    3/4 cup olive oil

     

    1/2 cup namu shoyu or braggs liquid aminos

     

    1/3 cup apple cider vinegar

     

    3 tablespoons honey

     

    2 cloves garlic, minced

     

    2” fresh ginger root

     

    1/4 cup water

     

    Mix in blender and refrigerate for 1-2 hours before serving.  Unless--you’re starving and want to eat right away (it’s still yummy served right away too!)
